An international delicacy for centuries, smoked salmon is the ideal combination of land and sea. And among the few still practicing the hands-on craft of smoking is Norwegian Ole-Martin Hansen, whose grandfather invented a highly regarded recipe using beech and juniper woods more than 80 years ago in Finnmark, above the Arctic Circle. Now, Hansen has brought the family secret to London, where his firm, Hansen & Lydersen, sells the fish to the city’s chicest eateries, including Terence Conran’s restaurant in the Boundary inn and Yotam Ottolenghi’s Nopi. Here, German filmmaker Nikolaj Belzer has created an intimate portrait of Hansen in his smokehouse-cum-residence in Stoke Newington in North London. Finally, a man who successfully sleeps with the fishes.
